What is Black Garlic?
The smell... oh my goodness the smell. It will have you salivating more than Pavlov's dogs and dreaming of garlic for days to come. Black garlic is a delicious culinary delight and is made in small batches on our farm (limited supply).
What is Black Garlic?
Black garlic is the hottest trend in restaurants in North America but it has been a staple in Asia for centuries. In Asia, it has been used as a flavour enhancer and for medicinal purposes which is catching on in North America. Black garlic is the created by aging/fermenting regular garlic bulbs over the course of weeks or months. It required a strictly regulated temperature and humidity to achieve its sticky consistency. We then take that a step further and freeze dry the fermented garlic and then powder it for ease of use and shelf life extension.
What does it taste like?
It definitely still has a garlic flavour to it but it also has hints of molasses and can be compared to caramelized garlic/onions. Did reading that just make you hungry? For those, like me, who struggle with digesting raw garlic, black garlic is much easier to digest as it is a more delicate option to raw garlic.
What are the health benefits of black garlic?
1) Higher in antioxidants
"Antioxidants are known for reducing harmful free radicals in the body. A study showed that black garlic has higher amounts of antioxidants and biological activity than regular garlic. Antioxidants can help reduce inflammation and prevent the development of cancer and diabetes, among other health problems." source
2) Balances blood sugar
"Diets that include black garlic have been linked to balance blood sugar levels. Researchers previously found that the high amounts of antioxidants in the ingredient could prevent diabetes complications. Studies with animals also found adding black garlic to diets could reduce levels of blood cholesterol and triglycerides." source

Black garlic also offers cardioprotective effects and is equally effective in reducing damage in the heart, according to a 2018 study. Researchers found that consumption of black garlic extract could reduce growth of colon cancer cells and leukemia cells.
