Black Garlic Roast Potatoes

As some of you may know, I grew up on a farm in northern Alberta… like way north! I also come from Irish roots so potatoes were a staple in our household. My mom is big on potatoes… or spuds as my Boppa liked to call them, and they really could be paired with most meals. But, sadly, my mom also liked to boil her potatoes… talk about a non-appetizing way to eat potatoes. That is if you ask me because to this day she and my dad love boiled potatoes… I am not a fan and don’t worry this won’t be my I hate boiled potatoes coming out party because my momma is well aware! But… when you roast a potato the true beauty of the potato gets to shine. Then you add a little garlic, butter, salt and whammo you have a flavor sensation on your hands.

 

Roast potatoes also don’t take a ton of time to make but they really are worth the effort for the delicious flavor you get. And why use the black garlic powder? Well, black garlic powder has a caramelized garlic and adds a sweet and smokey flavor. So here goes the recipe… let us know if you give it a try and please let me know what you think of it.

 

 

 

BLACK GARLIC ROAST POTATOES

Ingredients:

1-2 TBSP Garlic Ranchers black garlic powder

2 TBSP lard, bacon grease or avocado oil

1-2 tsp salt

4 medium sized potatoes, chopped

 

Directions:

1) Preheat the oven to 350 degrees

2) Chop up those potatoes. Get them all chopped up and then put them into a bowl. PRO TIP if you are wanting to have less starch in your life you can soak the potatoes in warm water for 5-10 minutes. Drain and dry (drying is key because you don’t want soggy roast potatoes).

3) Warm the bacon grease or lard (if you are using avocado oil you do not need to do this step) until they are liquid then pour you oil over the roast potatoes.

4) Add the black garlic and salt to the potatoes and then toss to ensure the spice love gets shared with all of the potatoes.

5) Spread your potatoes in a cookie pan with sides (so you don’t lose any of the precious potatoes). Cook for 20 minutes then flip the potatoes and cook for another 15-20 minutes.
