Lucia's Italian Garlic Chicken

You had me at garlic... As you may have noticed as a Canadian Garlic Farm we LOVE garlic. Like a whole new level of love. We like to say it is the Frank's Red Hot Sauce of our kitchen "I put that s*^& on everything!". Garlic chicken is a dynamo combo of flavours... plain chicken can be pretty boring but add a little garlic and BOOM you have a great flavour filled meal to share with family and friends.

Garlic Chicken Recipe

Ingredients:

3 chicken breasts (sliced thinly into 3)
1 t garlic ranchers garlic powder
3 tsp chunked garlic from Garlic Ranchers or 3 cloves of fresh garlic thinly sliced.
1 cup white wine, and 1 glass for yourself while cooking
1 T olive oil
1 T butter 
2 sprigs fresh thyme
1 sprig rosemary (remove rosemary leaves from another stalk to add to the sauce)
2 T flour for dusting chicken

Directions:


Slice chicken width ways into 3 thin slices and pound lightly with a meat tenderizer

Dust chicken in flour and place on a plate

In a saucepan over medium heat, add olive oil and butter and heat, adding garlic and all of the thyme and rosemary, salt and pepper when the olive oil starts looking glossy and butter is melted.

Medium heat the whole
Time is super important!

Gently cook the chicken, turning once until all pink has gone and remove from pan if you need to do two batches. Once all batches are cooked, add all chicken back into pan and put in white wine. Cook until the alcohol smell has burnt off - always and medium heat so you don't over cook the chicken.

Serve with horseradish mashed potatoes, zucchini, Calabrian chilli and a little parsley to finish!
